This place has amazing congee. The real question is it it worth the wait?
Hubby and I orginially came here for their crab congee, but was told that they do not have it that day. So hubby and I settled for the frog congee and a plate of stir-fried cheung fun. We then proceeded to wait and wait. After 20 minutes, I was like what is taking them so long are they butchering the frog or something? So I turn around and indeed they were chopping frogs and de-skinning them with this huge cleaver on a butcher block on the floor! Very vivid. I remember this even though I patronized this place back in December 2011.
Another 20 minutes goes by and I bug the owner, and he was it will be ready soon. My congee arrives another 10 minutes later but without the stir-fried cheung fun. After we finished the congee, the cheung fun arrives. We were not the only ones waiting for our food, but the entire restaurant was as well. FYI, we were the 3rd table in the restuarant since we arrived at opening time.
The cheung fun was yummy. Deceptively simple with only a few ingredients and no protein and yet super tasty. My only gripe with this place is the wait and the opening times. Twice I have attempted to go back to try their crab congee. Both times they were closed with hand written notices saying that the owners are celebrating some sort of holiday. Sigh…
Anyways if you love congee you should give this place a shot. Another bonus is that they are cheap, the congee and cheung fun is 50HKD($6.50USD). They open at 6pm to sometime in the early morning, Mon-Sat.

*Edit 5/28/2012: I just revisted Shun Tak Chuen Hot Pot Congee for their crab congee, it was good but not as good as Wong Chi Kee in Central. And this time they opened at 7pm instead of 6pm on a Thursday. Best to call ahead.

That cheung fun looks so good! Gah I miss Asian food
